This is my go to snack that I always have on hand for those times when I need a healthy snack. The combination of sweet & salty with the richness of the coconut oil infused nuts makes this snack epic indeed.
This is hands down my favorite snack. The roasted walnuts are super easy and fast to make & stay fresh for a week (maybe longer but mine never last long enough for me to test this out) if kept in an airtight container. I always have these on hand for snacks, salads, and other recipes.

Ingredients
- 1/2 pound walnut halves
- 1/2 cup coconut oil
- 1/2 cup granulated stevia
- 1-2 tablespoons sea salt

Instructions
- Preheat oven to 400 degrees
- Put 2 tablespoons of coconut oil onto each cookie sheet.
- Melt coconut oil in preheated oven for 5 minutes
- Add walnuts to hot oil, toss to coat
- Sprinkle with sea salt
- Bake for 10 minutes, rotate pans, & stir
- Bake for another 8 minutes
- Sprinkle with granulated stevia.
- Let cool, stir, sprinkle with more stevia if you’d like.
- Sprinkle with a little more sea salt
- Store in an airtight container
